Caramel Apple Pound Cake

If you haven’t already had enough goodies for the Holidays, take a little time and not much effort and try this one. I don’t think you will be disappointed.

Caramel Apple Pound Cake

3 cups sugar
1 1/2 cups Crisco oil
3 eggs
3 cups plain flour
1 tsp. baking soda
1/2 tsp. salt
3 cups chopped apples
1 cup chopped walnuts or pecans

Mik oil, sugar and eggs. Sift flour with soda and salt; add nuts and apples to flour and add gradually to other mixture. Pour into prepared tube pan and bake at 325 degrees for 1 hour and 15 minutes.

Caramel Topping

1/2 stick margarine
1/2 cup milk
1 cup brown sugar

Cook sugar and margarine until smooth. Add milk and cook until thick. Drizzle over cake.

  1. Oh, Sara! Why did you have to do this to us? I just polished off Jersey’s cookies (when you weren’t looking) and now JERSEY will have to bake us this Caramel Apple (5-lbs) cake!! And I suppose she will expect us to gobble it all up, too! And the lbs will follow, I imagine!!! Oh well. A gal’s gotta do what a gal’s gotta do…so …OK JERSEY…go ahead and make the cake. We will dutifully eat it!!!!!!!!!!

  3. I’ve been on the Weight Watcher’s Diet for several months and I actually think the the carmel topping is fine for the diet but I don’t know about the rest of the cake!!!! Sounds like a wonderful dessert for Christmas.

      1. Sara, I don’t know what they do in the rest of the North East, but In New York we just lick the bowl. Why waste time scraping it. You get to skip a whole step.

  5. I made the above cake using all the ingredients above and baked for 1 hour and 15 minutes. I took the tube pan out of the oven and it was oh so beautiful. In about ten minutes I walked by and it had fallen. Do you think it is the elevation here? I live in LA. I’m stumped as to what I did wrong.

    1. Rena, the last time I tried baking my ‘tried and true’ poundcake recipe that I have made for years it fell. I thought it could have been the fact that I peeked in the oven to look at it because at the time I didn’t have an oven with a glass door and light. Did you open the oven door or bang anyhthing near the oven? I do know my mother always told me you had to walk very carefully in the kitchen, etc. when a cake was baking and not make motions to disturb it or it may fall.

      1. I know I was so excited about it, I did take more than one peek. So maybe next time I’ll just have to wait. It also wasn’t done. Do you think the type of apples could have anything to do with it?

      2. I looked up what kind of apples to use in a cake and several sites
        used Golden Delicious apples in their cake recipes. Other varieties named or used were Granny Smith and Stayman.
        You said your cake wasn’t done so the problem was probably either you didn’t cook it long enough or there was something wrong with your oven.
