Peach Cake

Peach Cake
Peaches at every road side stand and in every grocery store, I found this recipe for a different, wonderful, sweet cake that will leave your friends begging for the secret (it is the peaches rolled in flour!). So I thought I would give it to my friends at The Daily Lily. Enjoy and share.

2 cups plain flour, divided
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, well beaten
1 3/4 cups sugar
1 cup vegetable oil
2 cups fresh peaches, chopped
1/2 cup chopped nuts
Whip Cream

Combine 1 1/2 cups flour, soda, salt & cinnamon. In another bowl mix eggs, sugar and oil; beat until smooth. Add flour mixture and beat at low speed with mixer until just blended. Use remaining 1/2 cup flour to coat peaches and nuts; fold into batter. Pour batter into a 13 X 9 X 2 inch pan sprayed with Pam. Bake at 375 degrees for 50 minutes or until cake tester comes out clean. Cool. Cut into squares and serve with Whip Cream on top of each piece. And,

    2. You would be an excellent candidate to bake for me. I don’t think it will put me in or keep me out of the obese circle.

      I seem to think with the fresh peaches it might even be a little better for me than the cakes you might purchase already made. I would sure like to try it.

      I seem to think many of us have lost the joy of baking and hit the stores a little too often while passing by the lovely fruit stands. And cakes sure do have an aroma while being made that could go in the category of comfort food. Why don’t we just try it!

I guess I now know why I had to keep looking at all those peaches and peach colors on the grocery store shelves and on the fruit signs and the smoothie signs and on top of desserts and on the school supplies and on the flower blooms and now on the borders of this web page…and the list goes on. Guess I will report back after I have made the cake.

Debi what about the part that said share?…Does report back mean youre going to eat the whole thing all alone …..if so then maybe that might put a little extra calories to your intake….but if you share with say like us that would not be so hard on the caloric intake:)….Sara sure wouldnt mind a big slice…and me too..dj:)

      3. There you go again, Sara. “PEACHING” the GOSPEL to the CYBER-WORLD. And another thing!!!! How come come you haven’t mentioned PEACH PIE?
        I thought a hard-core pie lover like you would have opted for PEACH PIE. I guess Fall is in the air and who loves change more than you & GOD?!!BUT, DO Consider Peach pie.
