Chocolate Zucchini Cake by Debi

It’s zucchini squash time in the garden and I have been utilizing the zucchini from my garden in different ways. Sara gave me the idea to try to make chocolate zucchini cake the other day and searched for a recipe for me. I settled on the one below which sounded very similar to what she found. Instead of a two-layer cake, I made a 9” x 13” sheet cake in a glass pan; omitted the optional espresso powder; used canola oil and dark brown sugar; sour cream instead of yogurt; and iced with the milk chocolate icing suggested in recipe link. https://sallysbakingaddiction.com/2016/02/17/marble-cake/

If you like chocolate like I do, I think you will like this cake.

Ingredients:

·         2 cups (250g) all-purpose flour (spoon & leveled)

·         3/4 cup (63g) unsweetened natural cocoa powder

·         2 teaspoons baking soda

·         1/2 teaspoon baking powder

·         1 teaspoon espresso powder (optional)

·         1/2 teaspoon salt

·         1 cup (240ml) canola or vegetable oil

·         1 cup (200g) granulated sugar

·         3/4 cup (150g) packed light or dark brown sugar

·         4 large eggs, at room temperature

·         1/3 cup (80g) sour cream or plain yogurt, at room temperature

·         2 teaspoons pure vanilla extract

·         3 cups shredded zucchini (about 3 medium)*

·         1 cup (180g) semi-sweet chocolate chips

·         chocolate frosting or vanilla frosting

Directions:

• Preheat oven to 350°F (177°C). Grease two 9×2 inch cake pans. (Make sure they’re at least 2 inches high, deep dish style.) Set aside.

• Make the cake: Whisk the flour, cocoa powder, baking soda, baking powder, espresso powder (if using), and salt together in a large bowl. In another large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the oil, granulated sugar, brown sugar, eggs, sour cream, vanilla, and zucchini together until combined. Pour into dry ingredients and beat on medium speed until completely combined. Beat in the chocolate chips. Batter will be slightly thick.

• Pour batter evenly into cake pans. Bake for around 25-32 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it is done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.

Prayer

In reading “Praying with Smith Wigglesworth Faith-filled prayers for Fervent prayer warriors by Larry Keefauver” I ran across a prayer  entitled “Praying Through.”
It raised questions in my mind as to how I’ve been praying.

Here is the paragraph I need help understanding.
“Teach me, O God,
Instead of praying about, to pray through the problem,
Instead of praying for, to pray in the Spirit,
Instead of praying to, to pray with Thee.”

Questions I have is, am I praying with God and what does that
look like?

 

Book Discussion on Afterlife

“How Close Are We to Those Who Have Died?”

In her book titled “Beyond Death”, Flora Slosson Wuellner writes about contact with those who have died as opposed to “a total separation from loved ones still on earth” in the chapter, “How Close Are We to Those Who Have Died?” She discusses both healthy and unhealthy contacts and says “we judge the health of our beyond-death contacts the same way we discern whether our earthly contacts and relationships are healthy: do we feel free or controlled? Are we growing in loving outreach to others around us? Is our daily life still interesting? Do our usual activities give us energy? Do we make independent choices and explore options? Or do we feel a growing dependence, addictiveness?” She goes on to advise that “some after-death contacts should be discouraged, just as some types of earthly relationships should be discouraged.”

Wuellner gives an example of a grandfather of one of her life-long friends that died but didn’t want to enter his next life. He wanted to stay “earthbound” because in life he had “maintained iron control” over his family that he had pulled out of poverty and feared losing what he had gained. He wanted to do the same in death so he came to his granddaughter one night very angry that no one listened to him anymore and he wanted something done about it! The unafraid granddaughter “of great spiritual strength and insight” spoke to him lovingly but firmly and explained that though “they admired him for the many good things he had done for the family…it was time for him to move on…that Christ awaited him, friends awaited him, and that all he had to do was to turn toward the Light.” He was told to leave and not come back complaining because she needed to sleep! “He left sulkily”. Then she prayed for him and slept. Many years later he returned with a peaceful face and then never tried to make contact again.

In another incident, an ex-husband (who in life had “remained in friendly contact for the sake of his daughter”) came back and everyone from the daughter to the dog saw him. Apparently, he wasn’t angry or controlling but “had no wish to explore new options”. He wanted no part of life after death. He wanted to stay on earth where things were familiar and had “no special desire to come closer to God.” Wuellner’s friend knew this was not healthy …” his visits were disrupting their daily lives. Friends, understandably, stopped coming to his house.’” So, this friend got her prayer group to pray; “surrounded herself with God’s love and light”; and told her former husband very firmly to stop the visits, “turn to God’s Light and move on. There he would find family and friends who had died earlier. They awaited him and would welcome him to a better, happier life.” Even after assuring him he needed to go and grow, he tried to return many times.  She learned to be “very tough with him”; told him to go into the Light; don’t fear; God is with you holding your hand; we are praying for you.

Wuellner explains that these were not demonic encounters but just ‘childish, earthbound souls clinging to what they were used to, wanting people to notice and listen to them. They would not let go, release.” She says they had to be dealt with just like a clinging neighbor on earth who visits or calls too much, always needing reassurance or talking trivia. She sums it up by saying: “The fact that people had died makes no difference in the way they needed to be encountered: with lots of tough love and firmly set boundaries.”

We live in Glory

We live in glory? Did you know that? The Bible says we go from glory to glory. 2 Corinthians 3:18 kJV

“But we all, with open face beholding as in a glass the glory of the Lord, are changed into the same image from glory to glory, even as by the Spirit of the Lord.”

Prayer Book-John Yera

Our beloved friend, Mary Grace Henry, spent the last couple of years in a Wednesday Morning prayer group lead by Pastor John Yera at our Community Baptist Church, Leesburg, Va. He still holds those prayer meetings and all are welcome. 🙏🏻

I got to know him well when MG was hospitalized and later rehab and then her Heavenly home going. A few months after her death he shared a signed copy of his newly published prayer book with me. I guess we had been watching one another closely from his heartwarming message to me.😱

Truly, I was watching him and he showed himself to be a man of integrity of character. He was faithful in his visits and being a part of prayer on a steady basis in the rehab facility touching many that were going through their own struggles. He walks boldly in his wheelchair carrying the aura of solace to the needy. His prayers are prophetic in nature as they drill into the hurt of the heart to heal and comfort.

  The Dig and the Light Reveal the Hidden

Ephesians 5:13 ESV But when anything is exposed by the light, it becomes visible. John 3:20 For everyone who does wicked things hates the light and does not come to the light, lest his works should be exposed.

In my backyard,  I’ve had a hard time growing grass.  I had a lawn specialist come in who fertilized and aerated it. Two years they worked on it but no grass!  I had to let them go, as the lovely green grass in their ads didn’t happen.

As I was making bigger flower beds this year, I decided to put the grass plugs I had removed and place them on the bare areas.  The ground was so hard I dug a little deeper to break up the soil.  Oh my, what did the light expose, a small amount of soil, plastic mesh, and roots heavily crisscrossing everywhere.  I pulled out the roots one by one for those that pulled out easily and used loppers on others.  New soil was dispersed, and plugs were set in place. Within  weeks the beginning of lush green grass could be seen.

I wish God would have said, “Grass Grow”.  How easy that would have been, however, I learn more by real life situations that God uses to teach. How about you?

On the surface you can see there was a big problem that seemed not to be able to be fixed.  One professional after another with their solution weighed in. Trying to doctor the problem by fertilizing, and punching holes didn’t even touch the problem.

Asking God to help me and to show me what He wanted me to learn, I heard Him say one word, Dig!  Immediately, I picked up the shovel and dug.

The first thing brought to light was a thin layer of dirt. 🤔 If soil feeds plants then the Word must feed me.  “O mercy Lord, I need help!

Second, the light revealed mesh holding down a massive network of roots which symbolize sins.🤔 Mesh must be a cover up of the sins.

Third, roots symbolizes sins which are exposed. 🤔 So sins you think you had hidden like Adam and Eve did in the garden is a cover up to you alone, making you sick.. God’s gaze upon the sins and you know  that you’ve been caught. He had seen it all along but His full exposure brings you to your knees in great sorrow and repentance.  God the Son looks down on you and speaks three words, “You are forgiven.” Then pauses and says, “Sin no more.  Be about my Father work.”.

Bury these words in your heart – John 3:16. For God so loved the world that He gave His only begotten Son, that whoever (that’s you) believeth in Him, shall not perish, but have everlasting life.  By Rena K. Oynes © May 21, 2018

Hebrews 10:23 NLT

“Let us hold tightly without wavering to the hope we affirm, for God can be trusted to keep his promise.”  

Thus we can sing: What a friend we have in Jesus” We all have a friend in Jesus when we met Him we knew He would be our friend for all eternity.  He never tires of our constantly talking to Him throughout the day.  This morning as I was dragged myself out of bed to a new day by a persistent barking dog, I thought does Jesus get tired of us with all our issues we verbally deluge Him with day after day?  Does it sound like my barking dog does to me?

Just like our furry pets whom we love regardless of their barking, I know Jesus loves us more, so much that He laid down His life for each one of us.  He calls us friends.  He loves to talk with us, he loves us just the way we our, and walks through both our challenges and joys of each day.  Hold fast to Him!!!.  He has already lifted us up at Calvary, and He is there to see us through the gates, and talk to us on the right side of heaven!  

So hit the trial everyday with the enthusiastic, playful dog who is excited to be walking with you.  Link arms and hold fast to Jesus as you talk and share how much you love Him, how much He has done in your and others lives, and your prayers and concerns you would like to put in His lap for the day. Listen as He speaks to you and shares something from His textbook for our lives with Him.

What a friend who always keeps His promises.  Hold tightly, stay on your walking path of life with Him. Hold fast!
